Ingredients

  • For the Dough:
    • Old-fashioned rolled oats: 1½ cups (150g)
    • All-purpose flour: 1 cup (64g), spooned and leveled
    • Cornstarch: 2 tablespoons
    • Baking powder: ½ tablespoon
    • Baking soda: ¼ teaspoon
    • Salt: ¼ teaspoon
    • Ground cinnamon: 1¼ teaspoons
    • Ground nutmeg: ¼ teaspoon
    • Unsalted butter: 8 tablespoons, softened
    • Brown sugar: ½ cup
    • Granulated sugar: ¼ cup
    • Egg: 1 large
    • Pure vanilla extract: 1 teaspoon
    • Molasses: 3 teaspoons
  • For the Icing:
    • Powdered sugar: 1½ cups
    • Whole milk: 2 tablespoons
    • Pure vanilla extract: ¼ teaspoon

Instructions

  1. Prepare the Oats:
    • Pulse the rolled oats in a food processor until they reach a coarse, powder-like consistency.
  2. Cream Butter and Sugars:
    • In a mixing bowl, cream together the unsalted butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add Wet Ingredients:
    • Mix in the egg, vanilla extract, and molasses, blending until smooth and well combined.
  4. Incorporate Dry Ingredients:
    • Gradually mix in the flour, cornstarch, baking powder, baking soda, salt, cinnamon, and nutmeg. Blend until just combined.
  5. Chill the Dough:
    • Cover the dough and chill in the refrigerator for about 3 hours to ensure optimal texture.
  6. Shape and Portion:
    • Using a cookie scoop, portion out the dough onto baking sheets lined with parchment paper or silicone mats. Flatten each dough ball slightly to about ½ inch thick for even baking.
  7. Bake:
    • Preheat your oven to 350°F (175°C). Bake the cookies for about 12 minutes, or until golden and firm.
  8. Prepare the Icing:
    • While the cookies cool, whisk together powdered sugar, milk, and vanilla extract until a thick glaze forms.
  9. Ice the Cookies:
    • Dip the top of each cooled cookie lightly into the icing, allowing the excess to drip off. Let the icing set for about 1 hour.
