- ½ teaspoon baking powder
- ½ teaspoon salt
- 2 sticks unsalted butter (227g), cool but softened
- ¾ cup granulated sugar (150g)
- 2 tablespoons lemon zest
- 1 large egg
- 1½ cups powdered sugar (189g), sifted
- 2–4 tablespoons fresh lemon juice (adjust to taste)
Instructions
- Preheat and Prepare:
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Mix Dry Ingredients:
- Combine flour, baking powder, and salt in a bowl.
- Cream Butter and Sugar:
- Beat butter and sugar together until fluffy. Add lemon zest and egg, mixing well.
- Combine Mixtures:
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop and Bake:
- Scoop dough into 1-inch balls and place on the baking sheet, leaving 3 inches of space between cookies. Bake for 10–12 minutes, or until edges are golden.
- Cool and Glaze:
- Allow cookies to cool on a wire rack. Mix powdered sugar and lemon juice to make the glaze, then drizzle over cooled cookies.
