Description

These soft lemon cookies are a refreshing treat with a tangy citrus flavor and tender texture. Made from scratch, they’re easy to prepare and perfect for any occasion!


Ingredients

  • 2¼ cups all-purpose flour (286g)
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 sticks unsalted butter (227g), cool but softened
  • ¾ cup granulated sugar (150g)
  • 2 tablespoons lemon zest
  • 1 large egg
  • 1½ cups powdered sugar (189g), sifted
  • 24 tablespoons fresh lemon juice (adjust to taste)

Instructions

  1. Preheat and Prepare:
    • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Mix Dry Ingredients:
    • Combine flour, baking powder, and salt in a bowl.
  3. Cream Butter and Sugar:
    • Beat butter and sugar together until fluffy. Add lemon zest and egg, mixing well.
  4. Combine Mixtures:
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Scoop and Bake:
    • Scoop dough into 1-inch balls and place on the baking sheet, leaving 3 inches of space between cookies. Bake for 10–12 minutes, or until edges are golden.
  6. Cool and Glaze:
    • Allow cookies to cool on a wire rack. Mix powdered sugar and lemon juice to make the glaze, then drizzle over cooled cookies.
