  • ½ cup unsalted butter
  • ½ cup packed light or dark brown sugar
  • ¼ cup granulated sugar (plus ½ cup for rolling)
  • 1 1/3 cups all-purpose flour
  • 1 teaspoon pure vanilla extract
  • 1 egg
  • 1 teaspoon baking soda
  • 1 tablespoon cornstarch

Instructions

  • 1- Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • 2- Prepare Dough:
    • In a large bowl, mix peanut butter, butter, brown sugar, and granulated sugar until smooth.
    • Add the egg and vanilla extract, mixing until well combined.
    • In a separate bowl, whisk together flour, baking soda, and cornstarch. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  • 3- Chill Dough: Chill the dough in the refrigerator for 30 minutes to prevent spreading.
  • 4- Shape Cookies: Roll dough into 1-inch balls and roll in granulated sugar. Place on the prepared baking sheet and flatten with a fork to create a crisscross pattern.
  • 5- Bake: Bake for 10–12 minutes, or until edges are lightly golden.
  • 6- Cool: Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
