A light, fluffy cake with a creamy lemon pudding layer, baked to perfection.
Ingredients

- 1/2 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/4 tsp salt
- 1/2 tsp baking powder
- 1 tbsp lemon zest
- 1/4 cup lemon juice
- 2 tbsp melted butter
- 2 eggs, separated
- 3/4 cup milk
Instructions
- Preheat oven to 350°F (175°C). Grease a baking dish.
- Mix sugar, flour, baking powder, and salt.
- In another bowl, combine lemon zest, juice, melted butter, and egg yolks. Mix with dry ingredients.
- Beat egg whites to soft peaks, then fold into the batter.
- Pour into the baking dish and place in a water bath.
- Bake for 30-35 minutes until golden brown. Let cool before serving.
