    • 1 teaspoon baking soda
    • 1 teaspoon kosher salt
    • 2 cups ground walnuts

    • 3 tablespoons cocoa powder for chocolate walnut cookies

Instructions

  • 1- Prepare the Dough:
    • Process walnuts with white sugar until finely ground.
    • Cream butter, brown sugar, and processed walnut mixture until fluffy.
    • Add eggs, vanilla extract, and mix well. Gradually incorporate flour, baking soda, and salt until a dough forms.
  • 2- Shape and Chill:
    • Divide dough into quarters and shape each into a 6-inch log or 1-inch balls. Wrap in plastic wrap and chill for at least 2 hours.
  • 3- Preheat and Shape:
    • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper. Slice logs into ¾-inch segments or flatten balls slightly for even baking.
  • 4- Bake:
    • Place cookies 2 inches apart on the prepared sheet. Bake for 12–15 minutes or until edges are golden.
    • Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
