This simple banana bread recipe uses just two ripe bananas to create a moist and flavorful loaf. Perfect for breakfast, brunch, or a quick dessert, it’s a great way to use up overripe bananas.

- 2 medium ripe bananas (about 1¼ to 1½ cups mashed)
- 1¾ cups (219g) all-purpose flour
- ½ cup unsalted butter, softened
- 1 cup granulated sugar (or adjust to taste)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ¼ teaspoon baking powder
- ½ teaspoon salt
Instructions
- Mash Bananas: Mash ripe bananas in a bowl until smooth.
- Mix Wet Ingredients: Cream butter and sugar together until fluffy. Add eggs one at a time, mixing well. Stir in vanilla extract and mashed bananas.
- Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, stirring gently.
- Prepare the Pan: Grease an 8×4-inch loaf pan and pour in the batter, spreading it evenly.
- Bake: Preheat oven to 350°F (175°C) and bake for 50–60 minutes. Check doneness with a toothpick; it should come out clean or with a few moist crumbs.
- Cool and Serve: Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
