Description

This simple banana bread recipe uses just two ripe bananas to create a moist and flavorful loaf. Perfect for breakfast, brunch, or a quick dessert, it’s a great way to use up overripe bananas.

  • 1¾ cups (219g) all-purpose flour
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar (or adjust to taste)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ teaspoon salt

Instructions

  1. Mash Bananas: Mash ripe bananas in a bowl until smooth.
  2. Mix Wet Ingredients: Cream butter and sugar together until fluffy. Add eggs one at a time, mixing well. Stir in vanilla extract and mashed bananas.
  3. Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, stirring gently.
  4. Prepare the Pan: Grease an 8×4-inch loaf pan and pour in the batter, spreading it evenly.
  5. Bake: Preheat oven to 350°F (175°C) and bake for 50–60 minutes. Check doneness with a toothpick; it should come out clean or with a few moist crumbs.
  6. Cool and Serve: Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
