  • 6 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  • 1- Prepare the Filling:
    • Beat cream cheese, powdered sugar, and vanilla extract until smooth.
    • Shape into small balls (about 2 teaspoons each), place on a lined baking sheet, and freeze until firm.
  • 2- Mix the Cookie Dough:
    • Combine the strawberry cake mix, egg, oil, and baking powder in a bowl. Mix until a dough forms. Fold in white chocolate chips if using.
  • 3- Chill the Dough:
    • Refrigerate the dough for 30 minutes to make it easier to handle.
  • 4- Assemble the Cookies:
    • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
    • Scoop the dough and flatten slightly. Place a frozen cream cheese ball in the center and cover with more dough, sealing the edges.
  • 5- Bake:
    • Bake for 13–15 minutes, or until the cookies are set and lightly golden on the edges. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
